Yes, you can retrieve the lost text by re-assigning the removed heading.

Select the old heading from the Available column and move it back into the Assigned column. It will appear at the BOTTOM of your resume, not in its former position (remember, newly assigned headings start at the bottom and you have to move them up). 

Copy the text, remove the heading again, then paste the text under the new heading.
